Zack loves to dance. Here he is getting down to some kind of Rap or Hip Hop song he found on the radio. Yes, he is 2 years old and knows how to work the radio.He actually has a couple of pretty good moves. Or maybe they are dance moves only a parent can love :) Either way, I think you will like this video.

Pig Roast - Butterfly time
Here is my brother in law giving advice on how to best butterfly the pig.
Here is me ignoring his advice and sticking to the 3 cubans article.
Enough with the talk and brother in law shows me where he wanted me to cut :) (Actually, it worked out pretty well)

I dont have a meat scale yet, so I used our home scale to weigh myself then weigh myself with the pig and subtracted the difference. the scale showed he weighed about 65lbs dressed, but im sure this is not entirely accurate. Also, this is the pig after the hair removal and scraping. I scraped him again once he was in the house too.

Pig roast - Hair Removal
I did my first whole pig roast for Christmas. I followed the steps from 3 guys from Miami in how to cook it. Except I did not buy a prepared pig, but rather raised one from a baby and killed and cleaned it myself. I'll spare you pictures of me killing and gutting it. But here are the more interesting pictures.
Next time I think I'll do the hair removal before gutting it, but live and learn.
We used blow torches to burn the hair off, then scraped off the burnt hair and skin with a knife.

Here are a few pictures from our trip to Grand Isle. We didnt take many pictures because we were so busy fishing and catching crabs. We stayed for 2 nights in a good friend of ours camp all to ourselves. When it was all said and done, we caught an ice chest of crabs and had 2 zip lock bags of fillets! We also had fun eating at the great restaurants at night on Grand Isle.

We are Safe!

Satomi and I are with friends in Houston TX. We are staying at the Hilton Hotel. We are out of harms way with the hurricane.

If this does not prove my family is getting into the "we-have-a-Japanese-daughter-in-law" then I don't know what will. My mom made Christy a "kimono". Yes, thats right. She did not "buy" she "made".

Here is the back view. Hey Hisayo! How did the back of the kimono come out?? Sign up for an account and start leaving comments sister-in-law! You are the only one in your family I can speak to right now besides Satomi......so you should talk to me more often until I learn Japanese! :)

In the last post you could see the nice Alligator that was on my property. Recently, I took Satomi with me to try and track where he came from and while doing so I looked out into a field and saw DEER! Thats right, Plural! A deer with 2 fawns! It was awesome. Unfortunately, they ran into the woods before I could get the picture off. :(

Recently, Satomi and I bought 3 acres of Property close to where we live now. Here is a view of the trees in the front yard from the road.

There is our house in the back. Everything you see there is our FRONT yard

And here is our home. One day, we will replace this with a home we will build. But for now, I am very thankful to have something this nice to stay in. Later on we can post pictures of the inside.

I found an Alligator in the back of my property. I caught him and put him in the back of my truck.

At first satomi said "thats not an alligator", "you called me out for this!!". So I took it out of the truck and she yelled and cried for her mama.

Finally, I calm her down enough to stand next to me for a picture. The alligator bit on to the stick and would not let go of it!

Here is satomi getting a little braver :)

Finally, she touches it :) Notice the alligator is still biting that stick!

Satomi says the Alligator did not intrest her much. I guess this is the face she makes when she is bored and not having a good time.

After a while we noticed it was tagged by wild life and fisheries! So we decided to release it back into the wild.

Its night time and I cant see very well to grab the alligator. So I pin his head down first before grabbing him.

Hello Everybody,
Satomi does not know about this yet, but I thought it would be a good idea to start a blog for both of us so her family back in Japan can check up on and see what is going on. I just got in a new Digital Camera. I think picasa (the google program) will let me automatically post pictures to this blog which is why I picked this one.
Well, enough for now. Let me do some more testing.
